		<description>What I think is happening is that as your &#039;pig year&#039; experiment moves along, you&#039;re getting closer to your own ideals for pork preparation. And clearly the Hill Country direction is more to your taste than the Fette Sau direction. For me, of the dryer texture, dark-rub style that Fette Sau espouses, they are one of the best I&#039;ve ever had.</description>
